Short answer: buy Wingspan European Expansion first. More birds with no new rules. IGN and Fjord Labs both say get Oceania first, then add this for variety.
Pick Wingspan Americas Expansion first instead if this sounds more like your table: Newest box. Board Game Quest calls it a must-buy with rules that slot in easily. Games run a little longer.
